Our founder, Hiroshi Nakamura, spent over a decade perfecting his craft in Tokyo's most acclaimed ramen establishments. He worked alongside legendary ramen masters, learning not just recipes, but the philosophy behind every bowl—the importance of patience, precision, and passion in creating something truly extraordinary.
In 2019, after falling in love with San Antonio's dynamic culture and welcoming community, Hiroshi made the bold decision to bring his vision westward. He wanted to create a space where East meets West, where traditional Japanese techniques meet Texas hospitality, and where every bowl tells a story of dedication and excellence. That same year, Bakudan Ramen officially opened its first location at The Rim shopping center.
"Great ramen is not just food—it's a meditation, a craft, a conversation between the chef and the diner. I wanted San Antonio to experience this art form, prepared with the same respect and attention I learned in Tokyo."
The response was overwhelming. What started as a single restaurant fueled by pure passion quickly grew into a beloved local institution, expanding to Stone Oak in October 2022 and to Bandera Road in February 2023.
Today, Bakudan Ramen stands as a testament to what's possible when you honor tradition while embracing innovation. Our team of carefully trained chefs sources premium ingredients, slow-simmers broths for 18+ hours, and hand-crafts noodles daily—all to ensure that every bowl of ramen that leaves our kitchen meets our founder's unwavering standards of excellence.
Our Timeline
The Tokyo Years
Hiroshi spent countless nights in small ramen shops across Tokyo, studying under master chefs and understanding the deep traditions of authentic ramen-making. These years shaped everything we do today.
The Rim Opens
Bakudan Ramen officially opened its first doors at The Rim shopping center near La Cantera Parkway. The San Antonio community embraced our vision immediately, and we quickly became known for authentic Japanese ramen made fresh daily with premium ingredients.
Expansion to Stone Oak
Due to overwhelming demand and community support, we expanded with our second location in Stone Oak along Highway 281, bringing the Bakudan experience to more of San Antonio while maintaining our commitment to quality and authenticity.
Bandera Joins the Family
Our third location on Bandera Road opened, solidifying Bakudan Ramen as San Antonio's premier destination for authentic Japanese ramen. Three locations, one unwavering commitment to excellence.
